Cheyenne Cheese Bread
3 cups flour
1 tablespoon baking powder
1/2 teaspoon salt
6 slices crisply cooked bacon, crumbled
1/4 cup finely chopped onion
2 tablespoons bacon fat
2 tablespoons chopped parsley
1/4 teaspoon oregano, crushed
1 egg
1 cup milk
2 1/2 cups shredded sharp cheddar cheese
Combine flour, baking powder and salt; mix well. Add bacon, onion, bacon fat, parsely, oregano, egg and milk, mixing just until moistened. Stir in cheese.
Spoon into greased and floured 9-by-5-inch loaf pan. Bake at 375 degrees Fahrenheit for 50 to 55 minutes. Serve warm, toasted or cold.
