3/4 cup barley
4 cups water
29-ounce can of tomato sauce
1 15.25-ounce can of corn
2 cups chicken broth
3 cups chopped cooked chicken
2 tablespoons chili powder
1 tablespoons onion powder
1/2 teaspoons cumin
1/2 teaspoons celery salt
Dash of basil
Salt and pepper to taste
In an 8 quart pan, mix barley and water. Bring to boil and simmer 30 minutes. Next, add all other ingredients.
Bring to boil again and simmer at least another 30 minutes. If you simmer it longer, you may add more tomato sauce, chicken broth, or water to adjust the consistency as it cooks.
