This recipe takes approximately 7 cups of flour.
Mix for sponge:
1 1/2 cups warm water
2 tablespoons sugar
2 packages dry yeast
Mix together in a bowl with 1 1/2 cups of flour until smooth. Cover and let rise until doubled, approximately 30 minutes.
Heat 1 cup of milk (scald)
Add to milk:
2 tablespoons sugar, 1 tablespoon salt
3 tablespoons melted butter or margarine
When sponge is ready, mix down, add cooled milk mixture and flour, enough to form soft dough. Knead until smooth, 8 to 10 minutes. Place in a large greased bowl, cover and let rise until doubled, approximately 30 minutes.
Punch down, shape and put in 2 or 3 bread pans, let rise 30 minutes.
Bake 400 degrees Fahrenheit, 30 minutes, remove from pans and cool

"This is one of the easier and best recipes for homemade bread," Schellhammer wrote. "And I have given it to many over the years who still use it - thanks to Virginia Reighard."
