Northwest nosh: Bedford resort embraces flavors of Washington state
BEDFORD – Getting a taste of Washington state is a whole lot easier for area residents thanks to Omni Bedford Springs Resort.
The award-winning resort, along with other Omni hotels and resorts, is offering a “Taste Washington” wine and dinner menu through May 31 as part of a culinary series known as Flavors of the World, according to an Omni press release.
The menu features wines from Washington state vineyards paired with food that pays homage to the Evergreen State.
A “Taste Washington” room package is also available.
The program, an extension of the state’s annual month-long wine celebration in March, is offered in partnership with the Washington State Wine Commission, the release said.
Twenty wineries, including Canyon Ranch Vineyard, Chateau Ste. Michelle, Hogue Cellars and Charles Smith Wines, were involved in the program, and each participating Omni hotel or resort food and beverage team chose wines to complement their in-house programs, a spokeswoman said.
Wines from Washington have a stellar reputation.
“Washington State is the No. 2 premium wine grape grower in the U.S. The diverse topography allows for ideal grape growing conditions, making it one of the world’s great wine regions,” the release said.
In the last five years, the magazine ‘Wine Spectator’ gave nearly 50 percent of Washington state wines a score of 90 points or more, giving the state a higher average than regions such as California, Italy, France, and Oregon, it said.
Paul Sherlock, director of operations at the Bedford Springs resort, was one of 40 Omni professionals who went on tastings throughout Washington, he said.
Sherlock said “wine and food can be harmonized and should be harmonized and if you look back on wine and the heritage and the traditions worldwide it was always designed to pair nicely with food and I think Washington state really emulates that fact. Of the wineries I was able to visit, it was always shared with great food and good cheer.”
The local menu features several wines including a riesling from Milbrandt Vineyards and a 14 Hands chardonnay both from Washington’s Columbia Valley American Viticultural Area, and a pinot gris from Canoe Ridge Vineyard, which has an estate vineyard in the Horse Heaven Hills AVA and winery located in Walla Walla.
The local “Taste Washington” menu is available in the resort’s Frontier Tavern restaurant, which is open from 11 a.m. to 10 p.m. Sunday to Thursday, and 11 a.m. to midnight Friday and Saturday.
The resort’s Executive Chef David Noto said several chefs from Omni came up with the menu.
The four appetizers on the menu at a cost of $8 to $12 are: Handmade Washington cheeses served with fig jam, honey and olives; Dungeness Crab Fritters served with smoked tomato and bacon mayo; Fennel and Apple Salad made with arugula, spiced pecans, blue cheese and cherry dressing; and Dungeness Crab and Snap Pea soup.
The menu’s two entrees are a cider braised beef with carmalized parsnips, horseradish slaw, and a merlot wine reduction for $30; and a roasted salmon with wild mushrooms for $28.
For dessert the menu offers a Washington apple pie served with vanilla ice cream for $9.
